Key responsibilities as a Skilled Knife Hand will be to:
- Trim and prepare whitefish to specified standards using knife skills.
- Ensure optimal yields by minimizing waste while maintaining product quality.
- Adhere to all health & safety and food safety regulations.
- Maintain a clean and organized work area.
- Work efficiently within the production team to meet daily targets.
- Identify and report any issues related to product quality or safety.
- Follow company policies and procedures to ensure compliance with industry regulations.

Required experience/expertise to succeed as a Skilled Knife Hand will include:
- Proven experience as a knife hand, preferably in whitefish processing (desirable)
- Strong understanding of fish yields and trimming techniques.
- Knowledge of health & safety and food safety best practices.
- Ability to work efficiently in a fast-paced environment.
- Strong attention to detail and commitment to product quality.
- Good communication skills and ability to work as part of a team.
